Seems a little dramatic to me. 14 days of no pay from one of the few reasonably secure jobs left in America is hardly being treated worse than illegals coming across the border. Drama seldom plays in your favor. You chose not to get a shot, knowing the consequences. Your choice, your consequences, unless you have a wad of money to fight it out in court.
And I mean a WAD of money - like WAY more than a couple weeks without pay.
All that said, I would NEVER resign. The minute you do that, you give up on your own rights. If you stick around and they fire you, get some proof of why if you can. At some point in the future, you MAY have some path to reinstatement or other legal recourse. Frankly, it would surprise me if it ever gets to firing you, assuming you are willing to comply with alternative methods for helping ensure a safe federal workspace, like regular testing, etc.
If you do decide to take your fight to EEOC, I'd stifle the "illegals at the border" at the border talk. I know that to many people, "illegals" are different than legal immigrants, but to many others, it might look like racism. Why open that can of worms when it really has nothing to do with your refusal to get the shots anyway? It's just a personal opinion that you can't prove, and it's immaterial to any legitimate claim or complaint you may have. To an impartial third party, that sort of statement looks needlessly combative, which means it probably won't help you in the long run.
